grilled CHICKEN THIGHS
WHAT YOU NEED (Ingredients)
1) Boneless chicken thighs
2) Spices (of the East) N’At (1 Tablespoon for Each Pound of Chicken)
3) Olive Oil
4) Pita bread and Tzatziki (see next recipe!)
WHAT YOU DO (Instructions)
1) Lightly coat chicken with olive oil
2) Hand-rub Spices (of the East) N’At onto chicken
3) Grill on medium heat and serve with warm pita bread and tzatziki

Tzatziki
WHAT YOU NEED (Ingredients)

WHAT YOU DO (Instructions)
Follow it, but make life easier by doing two things
1) Use Greek yogurt and skip the step that requires you to strain the yogurt in a cheesecloth-lined sieve
2) Use seedless cucumbers (English-style) and skip the step that requires you to remove the seeds from the cucumbers
grilled LAMB KEBABS
WHAT YOU NEED (Ingredients)
1) Lamb cubed into 1 inch pieces (just ask the butcher)
2) Spices of the East N’At (1 Tablespoon for Each Pound of Lamb)
3) Olive Oil
4) Fresh mint leaves cut into thin strips (julienne style)
5) Pita bread and Tzatziki
WHAT YOU DO (Instructions)
1) Lightly coat lamb with olive oil
2) Hand-rub Spices (of the East) N’At and mint onto lamb
3) Grill on medium heat and serve with warm pita bread and tzatziki
CHICK PEAS & rice
WHAT YOU NEED (Ingredients)
1) Chick peas in a 14.5 oz can - buy as many cans as you want to make. The rest of the ingredients are expressed on a “per Can” basis.
2) Spices (of the East) N’At (1 Teaspoon for Each Can of Chick Peas)
3) Frozen green peas (1/4 Cup for Each Can of Chick Peas)
4) Olive Oil (1 and 1/2 Tablespoons for Each Can of Chick Peas)
5) Fresh mint leaves cut into thin strips (julienne style)
6) Lemon (1 Lemon for Each Can of Chick Peas)
7) Medium-Size Yellow Onion (1 Onion for Each Can of Chick Peas)
8) Shallot (1 Shallot for Each Can of Chick Peas)
9) Rice (1 Cup for Each Can of Chick Peas)
WHAT YOU DO (Instructions)
1) Chop onion and shallot
2) Cook in oil over medium-low heat 5 to 7 minutes - stir often
3) Add Spices (of the East) N’At and cook for 1 more minute
4) Increase heat to medium
5) Add chick peas and green peas and cook for 3 more minutes
5) Stir in chopped mint and squeeze in lemon juice (NO SEEDS!!!)
6) Serve with cooked rice like Jasmine, Basmati, or what you like
